INGREDIENTS
- 1 pound peeled and deveined large shrimp (20/26 count, fresh or frozen/thawed)
- 1/4 cup coconut or canola oil
- 1 clove minced garlic
- 1 pound bag of frozen mixed stir fry veggies or a fresh veggie combo of your choice
- 1 cup of orange juice
- 3/4 cup - Mora Jamaican Jerk Mango (JJM) Chutney
FOR SERVING
- Jasmine or Basmati rice
- Cilantro or Italian Parsley
JERK MANGO SHRIMP STIR FRY
Feel the breeze. Smell the food. Dinner on the beach tonight!
INSTRUCTIONS:
STEP 1
Heat oil over medium heat in frying pan or wok for 3-5 minutes
STEP 2
Add shrimp and garlic and sauté until shrimp turns pink (approximately 3-4 minutes)
STEP 3
Remove shrimp from pan and set aside
STEP 4
Return pan to stove and add vegetables and sauté until vegetables are tender (approx 3-5 min). Remove veggies and set aside.
STEP 5
Add Mora JJM Chutney and orange juice to pan and reduce over medium heat until the sauce starts to thicken.
STEP 6
Turn off heat from the pan and combine with cooked shrimp and veggies.
STEP 7
Top with torn cilantro or Italian parsley.
STEP 8 - Serve over jasmine or basmati rice, .. chill and enjoy ..
